A receita:

2 claras de ovo
100g de açúcar em pó
80g de avelã
1 pitada de sal

1. Triturar a avelã e reservar2.Bater as claras em castelo com a pitada de sal. Quando estiverem firmes juntar a pouco e pouco o açúcar e envolver bem antes de adicionar mais e sem nunca parar de bater.
Bater  até o merengue ficar firme e brilhante.3. Adicionar a avelã e envolver bem
4. Fazer pequenas nuvens sobre uma folha de papel vegetal
5. Forno a 180º durante 25 mn
